- 1 lb ground beef (or turkey, for a lighter option)
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 can black beans, drained and rinsed
- 1 cup corn kernels, canned or frozen
- 2 cups shredded Mexican blend cheese
- 1 bag tortilla chips, crushed
- 1 cup salsa
- 1/2 cup sour cream
- Optional toppings: diced tomatoes, shredded lettuce, sliced black olives, diced avocado, jalapeño slices, cilantro, and green onions
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
- Step 2: In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
- Step 3: Add taco seasoning and water to the beef, stirring well to coat. Simmer for about 5 minutes until the mixture thickens.
- Step 4: Stir in the black beans and corn to the beef mixture, allowing everything to heat through.
- Step 5: Spread a layer of crushed tortilla chips evenly on the bottom of the prepared baking dish.
- Step 6: Spoon the beef mixture over the chips, spreading it evenly.
- Step 7: Layer half of the shredded cheese over the beef mixture, followed by a layer of salsa.
- Step 8: Add a second layer of crushed tortilla chips, then spread the remaining cheese on top.
- Step 9: Cover the baking dish with foil and bake for 15 minutes. Remove the foil and bake for another 5-10 minutes until cheese is melted and bubbly.
- Step 10: Let the casserole cool slightly, then top with sour cream and desired toppings before serving.
