Description

Sweet Potato Churro Bites are a delightful twist on traditional churros, made with sweet potato puree for a unique flavor and texture, served with a creamy dulce de leche dip.

Ingredients

Scale
  • 1 cup sweet potato puree (about 1 large sweet potato)
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • Vegetable oil for frying

For the Cinnamon Sugar Coating:

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon

For the Dulce de Leche Dip:

  • 1 cup dulce de leche
  • 1 tablespoon heavy cream (optional, for thinning)

Instructions

  1. Prepare the sweet potatoes by peeling and chopping them into chunks, then boil until tender.
  2. Drain and mash the sweet potatoes until smooth.
  3. In a mixing bowl, combine sweet potato puree with flour, sugar, baking powder, cinnamon, salt, melted butter, and egg to form a smooth dough.
  4. Shape the dough into small balls, about the size of a marble.
  5. Heat vegetable oil in a deep skillet to 350°F (175°C) and fry the churro bites until golden brown, about 2-3 minutes per side.
  6. Remove the churro bites and let them drain on paper towels.
  7. Prepare the dulce de leche dip by warming it in a saucepan, adding heavy cream if desired.
  8. Coat the churro bites in cinnamon sugar while still warm and serve with the dulce de leche dip.

Notes

  • Maintain oil temperature at 350°F (175°C) for best frying results.
  • Avoid overcrowding the pan while frying to ensure even cooking.
  • Roll churro bites in cinnamon sugar while warm for better adherence.
  • Experiment with different dips and flavor variations for a unique twist.
