For the Linguine & Shrimp Scampi

  • 1/2 lb linguine
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1/4 tsp red pepper flakes
  • 1/2 lb jumbo shrimp, peeled and deveined
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/3 cup white wine or chicken broth
  • 3 tbsp lemon juice
  • 3 tbsp finely chopped parsley, plus more for garnish

For the Garlic Butter Steak

  • 1/2 lb NY Strip Steak
  • 1/2 tsp coarse salt
  • 1/8 tsp black pepper
  • 1/2 tbsp oil (high smoke point, like avocado or canola)
  • 1 tbsp unsalted butter
  • 1/2 tsp minced garlic

Instructions

Preparation

Step 1: Cook the Linguine

  1. Bring a large pot of salted water to a rolling boil.
  2. Add the linguine and cook until al dente, about 7 minutes.
  3. Drain the linguine well and set aside.

Step 2: Prepare the Shrimp Scampi

  1. In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil.
  2. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until the garlic becomes fragrant.
  3. Season the shrimp with salt and black pepper.
  4. Place the shrimp in the skillet, cooking until they turn pink and opaque, about 4-5 minutes. Remove the shrimp from the skillet and set aside.
  5. Pour the white wine (or chicken broth) and lemon juice into the skillet, scraping up any flavorful bits from the bottom.
  6. Allow the sauce to cook for 1 minute to reduce slightly, then remove from heat.
  7. Stir in 3 tablespoons of chopped parsley for a burst of fresh flavor.
  8. Add the cooked linguine and shrimp back into the skillet, tossing everything to coat well in the sauce.

Step 3: Cook the Steak

  1. Heat a cast-iron skillet over high heat until it’s very hot.
  2. Season the steak with coarse salt and black pepper. Lightly brush it with oil for a nice sear.
  3. Place the steak in the skillet, searing each side for 3-4 minutes or until it reaches your preferred doneness (135°F for medium-rare or 140°F for medium).
  4. Remove the steak from the skillet and let it rest for 5 minutes to retain its juices.
  5. In a small bowl, mix 1 tablespoon of unsalted butter with 1/2 teaspoon minced garlic.
  6. While the steak rests, spread this garlic butter over the steak for a melt-in-your-mouth, rich flavor.

Step 4: Serve

  1. Divide the linguine and shrimp mixture onto two plates.
  2. Slice the steak thinly and place the pieces on top of the pasta.
  3. Garnish with additional parsley for a fresh, vibrant touch.
  4. Serve immediately and enjoy with a side of crusty bread or a fresh green salad.

Notes

Cooking Note

For the best flavor, make sure your skillet is very hot before placing the steak in it, allowing for a perfect sear that locks in juices. Similarly, avoid overcooking the shrimp; they should be just pink and opaque to remain tender and juicy.
