For the Linguine & Shrimp Scampi
- 1/2 lb linguine
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 1/4 tsp red pepper flakes
- 1/2 lb jumbo shrimp, peeled and deveined
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1/3 cup white wine or chicken broth
- 3 tbsp lemon juice
- 3 tbsp finely chopped parsley, plus more for garnish
For the Garlic Butter Steak
- 1/2 lb NY Strip Steak
- 1/2 tsp coarse salt
- 1/8 tsp black pepper
- 1/2 tbsp oil (high smoke point, like avocado or canola)
- 1 tbsp unsalted butter
- 1/2 tsp minced garlic

Preparation
Step 1: Cook the Linguine
- Bring a large pot of salted water to a rolling boil.
- Add the linguine and cook until al dente, about 7 minutes.
- Drain the linguine well and set aside.
Step 2: Prepare the Shrimp Scampi
- In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil.
- Add the minced garlic and red pepper flakes, sautéing for about 1 minute until the garlic becomes fragrant.
- Season the shrimp with salt and black pepper.
- Place the shrimp in the skillet, cooking until they turn pink and opaque, about 4-5 minutes. Remove the shrimp from the skillet and set aside.
- Pour the white wine (or chicken broth) and lemon juice into the skillet, scraping up any flavorful bits from the bottom.
- Allow the sauce to cook for 1 minute to reduce slightly, then remove from heat.
- Stir in 3 tablespoons of chopped parsley for a burst of fresh flavor.
- Add the cooked linguine and shrimp back into the skillet, tossing everything to coat well in the sauce.
Step 3: Cook the Steak
- Heat a cast-iron skillet over high heat until it’s very hot.
- Season the steak with coarse salt and black pepper. Lightly brush it with oil for a nice sear.
- Place the steak in the skillet, searing each side for 3-4 minutes or until it reaches your preferred doneness (135°F for medium-rare or 140°F for medium).
- Remove the steak from the skillet and let it rest for 5 minutes to retain its juices.
- In a small bowl, mix 1 tablespoon of unsalted butter with 1/2 teaspoon minced garlic.
- While the steak rests, spread this garlic butter over the steak for a melt-in-your-mouth, rich flavor.
Step 4: Serve
- Divide the linguine and shrimp mixture onto two plates.
- Slice the steak thinly and place the pieces on top of the pasta.
- Garnish with additional parsley for a fresh, vibrant touch.
- Serve immediately and enjoy with a side of crusty bread or a fresh green salad.
Notes
Cooking Note
For the best flavor, make sure your skillet is very hot before placing the steak in it, allowing for a perfect sear that locks in juices. Similarly, avoid overcooking the shrimp; they should be just pink and opaque to remain tender and juicy.
