Preparation:
Step 1: Cook the Rotini Pasta
Start by bringing a large pot of salted water to a boil. Add the rotini pasta and cook it according to the package instructions until al dente. Rotini’s spiral shape is great for holding onto the creamy sauce. Once cooked, drain the pasta, reserving 1/2 cup of the pasta water to use later. Set the pasta aside.
Step 2: Prepare the Steak Bites
While the pasta is cooking, season the steak cubes generously with salt and pepper.
In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once the butter is hot and bubbly, add the steak bites in a single layer. Let them sear for about 2-3 minutes on one side without moving them, so they develop a golden crust. Flip the steak bites and cook for another 2-3 minutes until they’re browned and cooked to your desired doneness (medium-rare is ideal for tenderness).

In the same skillet, melt the remaining 1 tablespoon of butter. Add the heavy cream and Italian seasoning, stirring constantly as the sauce begins to simmer. Let it cook for 2-3 minutes to thicken slightly.
Gradually whisk in the grated Parmesan cheese, stirring until it’s fully melted and the sauce is smooth. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency. Taste and season with salt and pepper as needed.
Step 4: Combine Everything
Add the cooked rotini pasta to the skillet with the creamy Parmesan sauce. Toss the pasta to ensure it’s fully coated in the sauce. Gently fold in the steak bites, making sure they’re evenly distributed throughout the pasta.
Step 5: Garnish and Serve
Plate the pasta and steak, and garnish with freshly chopped parsley for a burst of color and freshness. Serve immediately while it’s hot, and enjoy the perfect balance of steakhouse flavors and creamy pasta goodness.
