- Salt and black pepper, to taste
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or cooking spray.
Step 2: Cook the Sausage
- Heat a large skillet over medium heat. Add 1 tablespoon of olive oil. Once hot, add the diced onions and sauté for 2-3 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the spicy Italian sausage to the skillet, breaking it apart with a spoon. Cook for 6-8 minutes until the sausage is browned and cooked through.
Step 3: Add the Vegetables and Pepperoni
- Stir in the diced red and green bell peppers, cooking for about 5 minutes until they begin to soften.
- Add the sliced pepperoni and continue to cook for another 2 minutes, allowing the flavors to meld together.
Step 4: Mix in the Tomatoes and Seasonings
- Stir in the diced tomatoes and tomato paste, mixing well.
- Add the dried oregano, basil, crushed red pepper flakes, salt, and black pepper. Let the mixture simmer for 5-7 minutes until it thickens slightly.
Step 5: Combine with Rice
- In a large bowl, mix the cooked rice with the sausage and pepperoni mixture until well combined. Taste and adjust seasoning if needed.
Step 6: Assemble the Rice Bake
- Transfer the rice mixture into the prepared baking dish, spreading it out evenly.
- Top the rice with an even layer of shredded mozzarella cheese, followed by a sprinkle of grated Parmesan cheese.
Step 7: Bake
- Place the baking dish in the preheated oven and bake for 20-25 minutes until the cheese is melted and bubbly, and the top is golden brown.
Step 8: Garnish and Serve
- Remove the dish from the oven and let it cool for 5-10 minutes.
- Garnish with freshly chopped parsley before serving.
