- 1 cup heavy cream

- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Cook the spaghetti according to package instructions until al dente, reserving 1/2 cup of pasta water before draining.
- In a large skillet, heat olive oil and sauté minced garlic until fragrant, then add sun-dried tomatoes and red pepper flakes, cooking for 2-3 minutes.
- Pour in heavy cream, stir, and let simmer for about 5 minutes to thicken.
- Add chopped spinach and cooked spaghetti to the skillet, tossing to combine and adjusting the sauce with reserved pasta water as needed. Season with salt and pepper.
- Stir in grated Parmesan cheese until melted, then serve garnished with fresh basil leaves.
Notes
- For a healthier option, substitute whole wheat spaghetti.
- To make it vegan, use coconut cream and nutritional yeast instead of heavy cream and Parmesan.
