Slow Cooker Ham and Potato Casserole

  • 2 cups cooked ham, cubed

  • 2 cups milk
  • 1/2 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • Fresh parsley, chopped for garnish

Instructions

Step 1: In a small bowl, mix the flour, paprika, salt, pepper, and thyme. Step 2: Layer half of the potatoes and onions in the slow cooker. Step 3: Sprinkle half of the flour mixture over the potatoes and onions, then add half of the ham and cheeses. Step 4: Repeat the layering with the remaining potatoes, onions, flour mixture, ham, and cheeses. Step 5: In another bowl, whisk together the milk, heavy cream, and minced garlic. Pour this mixture evenly over the layers in the slow cooker.

Variation: For a lighter version, substitute the heavy cream with additional milk and use low-fat cheese options. You can also add other vegetables like bell peppers or mushrooms for extra flavor and nutrition.

Notes

Cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the casserole is bubbly.

Serving Suggestions: Serve hot, garnished with chopped parsley. This dish pairs wonderfully with a side of steamed green beans or a crisp salad for a balanced meal.
