Preparation:
1: Make the Pudding
- In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk.
- Add the peppermint extract and green food coloring.
- Whisk until smooth and thickened, about 2 minutes. Adjust the food coloring for your desired shade of green.
2: Fold in the Whipped Topping
- Gently fold the thawed whipped topping into the pudding mixture until fully combined and fluffy.
3: Add the Mix-Ins
- Fold in the mini marshmallows and mini chocolate chips or crushed chocolate cookies (if using).
- Stir gently to evenly distribute the mix-ins without deflating the fluff.
4: Garnish and Chill
- Transfer the mixture to a serving dish or individual dessert cups.
- Garnish with green sprinkles or crushed candy canes for a festive touch.
- Cover and refrigerate for at least 1–2 hours to allow the flavors to meld and the texture to firm up.
