Instructions

Preparation:

1: Make the Crust

  1. In a medium bowl, combine the chocolate cookie crumbs and melted butter.
  2. Mix until the crumbs are evenly coated with butter.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.
  4. Place the crust in the refrigerator to chill and set while you prepare the filling.

2: Prepare the Filling

  1. In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  2. Add the peppermint extract and green food coloring, mixing until evenly combined. Adjust the amount of food coloring to achieve your desired shade of green.
  3. Gently fold in the thawed whipped topping until the filling is light and fluffy.
  4. If using mini chocolate chips, fold them into the mixture for added texture and flavor.

3: Assemble the Pie

  1. Spoon the mint cream filling into the prepared crust, spreading it evenly with a spatula.
  2. Smooth the top for a neat finish.
