  • 2 cups all-purpose flour

  • ¾ cup buttermilk (plus extra if needed)

For the Filling:

  • 8 oz thinly sliced roast beef (deli-style or leftover roast beef)

  • 1 cup shredded provolone or mozzarella cheese

  • 1 teaspoon Worcestershire sauce

  • 1 tablespoon butter (optional, for sautéing beef)

For the Au Jus Dipping Sauce:

  • 1½ cups beef broth

  • 1 tablespoon Worcestershire sauce

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • 1 teaspoon soy sauce (optional, for extra depth)

  • Salt & pepper to taste


Instructions

Preparation: Step 1: Prepare the Biscuit Dough

In a large mixing bowl, whisk together the flour, baking powder, salt, garlic powder, and onion powder. Add the cold, cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs. Slowly pour in the buttermilk and stir until the dough just comes together. Do not overmix.

Step 2: Roll Out and Fill the Biscuits

Turn the dough out onto a floured surface and gently knead it a few times. Roll it out to about ½ inch thickness. Cut the dough into even circles using a biscuit cutter or the rim of a glass.

Place half of the biscuit rounds on a parchment-lined baking sheet. On each round, layer a few slices of roast beef, sprinkle shredded cheese on top, and drizzle a small dash of Worcestershire sauce.

Top each filled biscuit with another dough round and gently press the edges to seal. You can crimp the edges with a fork for a rustic look.

Step 3: Bake the Biscuits

Preheat your oven to 400°F (200°C). Brush the tops of the biscuits with a little buttermilk or melted butter for extra golden color. Bake for 15-18 minutes or until puffed and golden brown.

Step 4: Prepare the Au Jus Dipping Sauce

While the biscuits are baking, prepare the dipping sauce. In a small saucepan, combine the beef broth, Worcestershire sauce, garlic powder, onion powder, soy sauce, and a pinch of salt and pepper. Bring to a simmer over medium heat. Let it cook for 5-7 minutes, stirring occasionally. Taste and adjust seasoning as needed.

Step 5: Serve and Enjoy

Once the biscuits are golden and baked through, remove them from the oven. Let them cool for a few minutes. Serve warm with small ramekins of au jus dipping sauce on the side. Dip, bite, and repeat!
