    • 1 cup shredded cheddar cheese
    • 1/4 cup cream cheese, softened

    • 8 slices of thick-cut bread (such as Texas toast or challah)
    • 4 large eggs
    • 1 cup milk
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • 1/4 cup granulated sugar (for coating)
  • For Cooking:
    • 4 tablespoons butter (for frying)

Instructions

Step 1: Prepare the Sausage Filling
In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain any excess grease. In a bowl, mix the cooked sausage, shredded cheddar cheese, and cream cheese until well combined. Set aside to cool slightly.

Step 2: Prepare the Bread
Using a rolling pin, flatten each slice of bread gently. This will help them roll up more easily. Cut off the crusts if desired.

Step 3: Stuff the Bread
Take a slice of the flattened bread, place about 2 tablespoons of the sausage filling on one edge, and roll the bread tightly around the filling. Repeat with the remaining slices.

Step 4: Make the Egg Mixture
In a shallow bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and salt until well combined.

Step 5: Coat and Cook the Roll-Ups
Heat a large skillet over medium heat and add 2 tablespoons of butter. Dip each stuffed roll-up into the egg mixture, ensuring they are fully coated. Once the butter is melted and bubbling, place the roll-ups seam-side down in the skillet. Cook until golden brown on all sides, about 3-4 minutes per side. Add more butter as needed for additional batches.

Notes

To keep the roll-ups warm while you finish cooking the remaining batches, place them on a baking sheet in a 200°F (95°C) oven. This will ensure that everyone gets to enjoy warm, freshly cooked roll-ups.
