  • 2 salmon fillets
  • 8 oz shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 tbsp butter
  • 2 garlic cloves, minced

Instructions

Preparation:

Step 1:
Preheat your oven to 400°F (200°C). Preparing the salmon first ensures that it is cooked through and retains its flaky texture. Line a baking tray with parchment paper or lightly oil the surface to prevent sticking.

Step 2:
Season both sides of the salmon fillets with salt, pepper, and paprika. These spices will enhance the natural flavors of the salmon, while the paprika adds a hint of warmth and color. Drizzle olive oil over the salmon to help it crisp up and stay moist during baking.

Step 3:
Place the salmon fillets on the prepared baking tray and bake them in the preheated oven for 12-15 minutes, or until the fish is cooked through. The salmon should be opaque and flaky in the center. The exact time may vary depending on the thickness of the fillets.

Step 4:
While the salmon is baking, heat a skillet over medium heat. Add 1 tbsp of butter and allow it to melt. Once melted, toss in the minced garlic and sauté for about 30 seconds, just until fragrant. Add the shrimp to the skillet and season with salt and pepper. Cook the shrimp for 3-4 minutes, stirring occasionally, until they turn pink and are fully cooked through. Be careful not to overcook the shrimp, as they can become rubbery.

Step 5:
Meanwhile, steam the broccoli florets until they are tender, but still vibrant green. This should take about 5-7 minutes. You can steam the broccoli using a steamer basket or simply boil it in a small amount of water. Once the broccoli is cooked, drain any excess water and transfer it to a large mixing bowl.

Step 6:
To the bowl of steamed broccoli, add the corn kernels and shredded cheddar cheese. Stir the mixture gently until the cheese begins to melt and coat the broccoli and corn. The warmth from the steamed vegetables will help melt the cheese, creating a creamy, savory side dish.

Step 7:
By the time the broccoli mixture is ready, the salmon should be done baking. Remove the salmon from the oven and let it rest for a minute. Plate the salmon and shrimp, and serve alongside the cheesy broccoli and corn mixture. Garnish the dish with fresh lemon slices to add a citrusy brightness that complements the richness of the seafood.

COOKING Note:

  • If you prefer a different cheese flavor, feel free to substitute cheddar with mozzarella or even Parmesan for a sharper, nuttier taste. You can also experiment by adding a bit of cream cheese for extra creaminess in the broccoli and corn mixture.
  • For added crunch, you can broil the salmon during the last 2-3 minutes of cooking to crisp up the top layer.
