  • 1 lb ribeye steak, thinly sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 8 slices provolone cheese
  • 8 slices bread (sourdough or white)

  • 1 tbsp olive oil
  • Salt and pepper to taste

  • 4 large potatoes, cut into fries
  • 2 tbsp olive oil
  • Salt to taste
  • Vegetable oil for frying (optional)

Instructions

Preparation:

Step 1: Prepare the Fries

  • Preheat the oven to 425°F (220°C).
  • Cut the potatoes into fry shapes, ensuring they are of even thickness for consistent cooking.
  • Toss the potato fries in 2 tbsp of olive oil, ensuring they are lightly coated. Spread them evenly on a baking sheet in a single layer.
  • Bake for 20-25 minutes, turning halfway through, until golden and crispy. If you prefer a traditional taste, you can also fry the fries in hot vegetable oil for 3-4 minutes until they are crisp and golden.
  • Season the fries with salt immediately after cooking for optimal flavor.

Step 2: Cook the Steak

  • Heat 1 tbsp of olive oil in a skillet over medium-high heat.
  • Add the thinly sliced ribeye steak to the skillet and season with salt and pepper. Sauté the steak slices for 4-5 minutes, stirring occasionally, until they are browned and cooked through.
  • Add the sliced green bell pepper and onion to the skillet. Continue cooking for an additional 3-4 minutes, or until the vegetables are tender and slightly caramelized.

Step 3: Assemble the Grilled Cheese

  • Butter one side of each slice of bread. Make sure the butter is spread evenly to ensure a crispy and golden crust.
  • On the unbuttered side of four slices, layer a portion of the steak mixture, spreading it evenly. Place 2 slices of provolone cheese on top of the steak mixture.
  • Top with another slice of bread, buttered side facing out.

Step 4: Cook the Grilled Cheese

  • Heat a clean skillet over medium heat.
  • Carefully place each assembled sandwich onto the skillet. Cook each sandwich for about 3-4 minutes per side, or until the bread is golden brown, and the cheese is melted and gooey.
  • Use a spatula to press down gently on the sandwiches to enhance the melting process.

Step 5: Serve

  • Serve the grilled cheese sandwiches hot with a generous side of crispy fries. Enjoy while the cheese is still melty and warm.

Notes

Cooking Note:

  • For an extra twist, add sliced mushrooms to the steak mixture during the sautéing step. The earthy flavor complements the steak beautifully.
  • You can also swap out the provolone cheese for American cheese, mozzarella, or even cheddar if you prefer a different flavor profile. Each cheese provides its unique taste and melting quality.
