  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup shredded cheddar cheese (or cheese of choice)
  • 1 avocado, sliced
  • 4 large flour tortillas
  • 1/4 cup sour cream
  • 2 tbsp fresh cilantro, chopped
  • Lime wedges for serving

Instructions

Preparation:

Step 1: Prepare the Shrimp

In a medium bowl, toss the peeled and deveined shrimp with the Old Bay seasoning, ensuring they are evenly coated. The robust blend of spices in Old Bay adds a delightful, tangy heat to the shrimp, giving the burrito its signature flavor.

Step 2: Cook the Shrimp

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, add the seasoned shrimp in a single layer. Sauté the shrimp for 2-3 minutes on each side until they turn pink and are fully cooked through. Avoid overcooking, as shrimp can become tough and rubbery. Once done, remove the shrimp from the heat and set aside.

Step 3: Warm the Tortillas

While the shrimp is cooking, warm the tortillas to make them pliable and easier to roll. You can heat them directly over a gas flame, flipping until slightly charred, or warm them in a dry skillet for about 30 seconds per side. Alternatively, you can microwave the tortillas for about 10-15 seconds each.

Step 4: Assemble the Burritos

Lay one tortilla flat on a clean surface. Start by spreading a layer of cooked rice in the center of the tortilla, followed by a spoonful of black beans and corn. Add 3-4 cooked shrimp on top of the rice and bean mixture. Then, sprinkle shredded cheddar cheese over the shrimp. Finish with a few avocado slices for creaminess and a drizzle of sour cream for extra richness. Finally, sprinkle a pinch of fresh chopped cilantro over everything.

Step 5: Roll the Burritos

To roll, fold in the sides of the tortilla over the filling, then roll the tortilla tightly from the bottom up to form a burrito. Repeat this process with the remaining tortillas and fillings.

Notes

COOKING Note:

  • If you prefer a more robust burrito, you can grill the finished burritos on a pan or skillet for about 1-2 minutes per side. This will give the burrito a crispy outer shell while keeping the inside warm and melty.
  • Adding a squeeze of lime juice to the inside of the burrito right before rolling adds a burst of freshness that complements the shrimp and cilantro.
