Ingredients (Makes 20–24 clusters)

Core Ingredients:

  • 2½ cups (75 g) cornflakes cereal
  • 1½ cups (260 g) semi-sweet chocolate chips (or chopped chocolate of choice)
  • 1 tbsp butter or coconut oil (for shine & smooth melting)

Optional Add-ins:

  • ½ tsp vanilla extract (optional for extra flavour)
  • Pinch of sea salt (optional – enhances chocolate taste)

Optional Toppings:

  • Coloured sprinkles
  • Crushed nuts (almonds, peanuts, or pistachios)
  • Mini marshmallows
  • Shredded coconut

Instructions

Preparation:

1: Prepare the Baking Tray

  1. Line a large tray with baking paper for easy removal.
  2. Set aside.

2: Melt the Chocolate

  1. In a heatproof bowl, combine the semi-sweet chocolate chips and butter or coconut oil.
  2. Melt using the microwave in 30-second intervals, stirring between each, until smooth and glossy.
    • Alternatively, melt over a double boiler (heatproof bowl over simmering water).
  3. If using, stir in the vanilla extract and a pinch of sea salt once melted.

3: Coat the Cornflakes

  1. Place the cornflakes into a large mixing bowl.
  2. Pour the warm melted chocolate mixture over the cornflakes.
  3. Using a rubber spatula or wooden spoon, gently fold and coat the cornflakes in chocolate until fully covered.
  4. Be gentle to avoid crushing them — you want to keep that crunch!

4: Form the Clusters

  1. Using a tablespoon or small cookie scoop, drop mounds of the mixture onto the prepared tray.
  2. Work quickly as the mixture will begin to set as it cools.
  3. Add optional toppings like sprinkles, crushed nuts, or shredded coconut on top before the chocolate sets.

5: Chill & Set

  1. Place the tray in the refrigerator for 30 minutes, or until the clusters are firm and set.
  2. Once chilled, transfer the clusters to an airtight container.
