Nacho Cheese Beef Wrap

  • 1 cup nacho cheese sauce
  • ½ cup sour cream
  • 1 can Rotel (green chilis with diced tomatoes)
  • ½ cup chopped green peppers
  • ½ cup diced onions
  • 1 packet taco seasoning mix
  • Nacho cheese-flavored Doritos, crushed (about 1 cup)
  • 4 large flour tortilla wraps
  • Shredded lettuce, for serving
  • Additional toppings (optional): diced tomatoes, sliced jalapeños, avocado slices, hot sauce

Instructions

Step 1: Cook the ground beef

Heat a large skillet over medium-high heat. Add the lean ground beef and cook for about 6-8 minutes, breaking it apart with a spatula, until browned and cooked through. Drain off any excess fat to avoid a greasy wrap.

Step 2: Add onions and peppers

Once the beef is browned, add the diced onions and chopped green peppers to the skillet. Sauté the vegetables with the beef for about 4 minutes, until the onions turn translucent and the peppers soften slightly.

Step 3: Season the beef

After the vegetables are cooked, sprinkle in the taco seasoning packet. Stir the seasoning into the beef mixture until it’s fully combined. Add ¼ cup of water if needed to help the seasoning coat the beef evenly. Let it cook for another 2-3 minutes, allowing the flavors to meld together. Remove from heat and set aside.

Step 4: Prepare the nacho cheese mixture

In a separate medium-sized bowl, combine the Rotel (with the juice) and nacho cheese sauce. Stir them together until smooth. This creates the rich, cheesy base for your wrap that ties all the flavors together.

Step 5: Assemble the wraps

Lay your flour tortillas on a flat surface. Spoon a generous amount of the nacho cheese mixture down the center of each tortilla, creating a thick layer. Next, add the beef mixture on top of the cheese layer. Spoon some sour cream over the beef, followed by a sprinkle of the crushed nacho cheese-flavored Doritos. These crushed chips will add a satisfying crunch to your wraps.

Step 6: Fold the wraps

Carefully fold in the sides of each tortilla and then roll it up tightly like a burrito, ensuring the filling is securely enclosed.

Step 7: Toast the wraps

Heat a clean skillet over medium heat. Place the wraps seam-side down into the skillet and cook for about 2-3 minutes on each side, until the tortilla is golden brown and crispy. This adds an extra crunch to the exterior, making the wrap even more irresistible.

Step 8: Serve

Once the wraps are toasted, remove them from the skillet and serve immediately. Garnish with shredded lettuce, and if desired, top with additional sour cream, diced tomatoes, or avocado slices. For those who love an extra kick, add sliced jalapeños or a drizzle of hot sauce.
