Instructions
Step 1:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Step 2:
In a large mixing bowl, combine the shredded beef, BBQ sauce, chopped onions, cilantro, garlic powder, smoked paprika, and chili powder. Mix well to ensure the beef is evenly coated with the sauce and seasonings.
Step 3:
Lay out the small tortillas on a flat surface. Place about 2 tablespoons of the BBQ beef mixture in the center of each tortilla. Sprinkle a generous amount of shredded cheddar cheese on top of the beef.
Step 4:
Tightly roll each tortilla around the filling, making sure the edges are sealed. Place the rolled taquitos seam-side down on the prepared baking sheet.
Step 5:
Brush the taquitos with olive oil or spray them with non-stick cooking spray. This will help them get crispy and golden in the oven. Lightly sprinkle salt on top for extra flavor.
Step 6:
Bake the taquitos in the preheated oven for 15-20 minutes, or until the tortillas are crispy and the cheese is melted. If you prefer a crispier texture, broil them for an additional 2-3 minutes.
Step 7:
Remove the taquitos from the oven and let them cool for a few minutes. Serve hot with a side of sour cream, ranch dressing, or extra BBQ sauce for dipping.
