Step 1: Make the Mac and Cheese
- Cook 1 cup of elbow macaroni according to the package instructions. Drain and set aside.
- In a medium saucepan, melt 1 tablespoon of butter over medium heat. Once melted, whisk in 1 tablespoon of all-purpose flour and cook for 1 minute to form a roux.
- Slowly pour in ¾ cup of milk, whisking constantly until the mixture is smooth and thickens, about 2-3 minutes.
- Stir in 1 cup of shredded cheddar cheese until fully melted and smooth. Add salt and pepper to taste, then mix in the cooked macaroni until well-coated. Set aside.
Step 2: Prepare the Beef Patties
- Divide 1 pound of ground beef into 4 equal portions. Shape each portion into a thin patty. Season both sides with salt and pepper.
Step 3: Cook the Patties
- Heat a large skillet or griddle over medium-high heat. Place the beef patties in the skillet and cook for 2-3 minutes on each side, until browned and fully cooked (or to your desired doneness).
- In the final minute of cooking, place a slice of cheddar cheese on each patty and let it melt. Remove the patties from the skillet and set them aside.
Step 4: Toast the Buns
- Brush the insides of 2 sesame seed burger buns with melted butter. Place the buns, buttered side down, onto the skillet or griddle and toast until golden brown.
Step 5: Assemble the Burger
- Spread mayonnaise or burger sauce on the bottom bun (optional).
- Place one cheesy beef patty on the bottom bun, followed by a spoonful of pickled red onions (if using).
- Add a second cheesy patty, then top with a generous scoop of mac and cheese.
- Place the top bun on the burger to complete the masterpiece.
