For the Mac and Cheese:

  • 1 cup elbow macaroni
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • ¾ cup milk
  • 1 cup shredded cheddar cheese

For the Burger:

  • 1 lb ground beef (80/20 blend for juiciness)
  • Salt and pepper, to taste
  • 4 slices cheddar or American cheese
  • 46 slices pickled red onions (optional, for extra flavor)
  • 2 sesame seed burger buns
  • 1 tbsp butter, melted
  • Mayonnaise or burger sauce (optional, for spreading on buns)

Preparation

Step 1: Make the Mac and Cheese

  • Cook 1 cup of elbow macaroni according to the package instructions. Drain and set aside.
  • In a medium saucepan, melt 1 tablespoon of butter over medium heat. Once melted, whisk in 1 tablespoon of all-purpose flour and cook for 1 minute to form a roux.
  • Slowly pour in ¾ cup of milk, whisking constantly until the mixture is smooth and thickens, about 2-3 minutes.
  • Stir in 1 cup of shredded cheddar cheese until fully melted and smooth. Add salt and pepper to taste, then mix in the cooked macaroni until well-coated. Set aside.

Step 2: Prepare the Beef Patties

  • Divide 1 pound of ground beef into 4 equal portions. Shape each portion into a thin patty. Season both sides with salt and pepper.

Step 3: Cook the Patties

  • Heat a large skillet or griddle over medium-high heat. Place the beef patties in the skillet and cook for 2-3 minutes on each side, until browned and fully cooked (or to your desired doneness).
  • In the final minute of cooking, place a slice of cheddar cheese on each patty and let it melt. Remove the patties from the skillet and set them aside.

Step 4: Toast the Buns

  • Brush the insides of 2 sesame seed burger buns with melted butter. Place the buns, buttered side down, onto the skillet or griddle and toast until golden brown.

Step 5: Assemble the Burger

  • Spread mayonnaise or burger sauce on the bottom bun (optional).
  • Place one cheesy beef patty on the bottom bun, followed by a spoonful of pickled red onions (if using).
  • Add a second cheesy patty, then top with a generous scoop of mac and cheese.
  • Place the top bun on the burger to complete the masterpiece.
