For the Avocado Garlic Yogurt:
- 1 ripe avocado
- ½ cup plain Greek yogurt
- 1 garlic clove, minced
- Juice of 1 lime
- Salt and pepper, to taste
Instructions
Step 1: Prepare the Patties
- Mix Ingredients: In a large bowl, combine cooked quinoa, mashed sweet potato, almond flour, green onions, cilantro, garlic powder, cumin, salt, and pepper. Mix until the ingredients are well combined and hold together.
- Form Patties: Shape the mixture into small patties, about 2-3 inches in diameter. Set aside.
Step 2: Cook the Patties
- Heat Oil: In a large skillet, heat olive oil over medium heat.
- Fry Patties: Gently place the patties in the skillet and cook for 4-5 minutes on each side, or until golden brown and crispy.
- Drain Excess Oil: Remove the patties and place them on a paper towel-lined plate to drain excess oil.
Step 3: Make the Avocado Garlic Yogurt
- Blend Ingredients: In a blender or food processor, combine the avocado, Greek yogurt, minced garlic, lime juice, salt, and pepper.
- Blend Until Smooth: Process until the mixture is smooth and creamy.
Step 4: Serve
- Plate Patties: Arrange the sweet potato quinoa patties on a serving plate.
- Top with Yogurt: Add a generous dollop of Avocado Garlic Yogurt on each patty.
- Garnish: Sprinkle with additional cilantro or a squeeze of lime juice for extra flavor.
