Scale
For the Caramel Pecan Layer:
- 1 cup unsalted butter
- 1 cup brown sugar, packed
- 1 cup light corn syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 3 cups pecan halves
For the Chocolate Layer:
- 1 cup semi-sweet chocolate chips
Optional Topping:
- Sea salt, for sprinkling
Instructions
Step 1: Prepare the Caramel Mixture
- In a medium saucepan over medium heat, melt the butter.
- Stir in the brown sugar, light corn syrup, vanilla extract, and salt.
- Continue stirring constantly as the mixture comes to a boil. Boil gently for about 5 minutes until it thickens slightly.
Step 2: Add the Pecans
- Remove the saucepan from heat and immediately stir in the pecan halves.
- Mix until the pecans are fully coated with the caramel mixture.
Step 3: Spread and Cool the Pecan Mixture
- Line a baking sheet with parchment paper or a silicone baking mat for easy removal.
- Pour the pecan mixture onto the prepared baking sheet and spread it out evenly using a spatula.
- Allow the mixture to cool for about 30 minutes until it firms up.
Step 4: Add the Chocolate Layer
- Place the chocolate chips in a microwave-safe bowl. Melt in 30-second intervals, stirring between each interval until smooth.
- Pour the melted chocolate over the cooled pecan mixture. Use a spatula to spread it evenly across the surface.
Step 5: Finish and Serve
- While the chocolate is still warm, sprinkle a pinch of sea salt over the top for a perfect sweet-salty balance.
- Let the bark cool completely at room temperature or place it in the refrigerator to speed up the process.
- Once the chocolate hardens, break the bark into bite-sized pieces.
