For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil (or vegetable oil)
  • Salt and pepper, to taste

Honey Garlic Sauce:

  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp fresh ginger, grated
  • 1 tbsp lemon juice (optional, for extra tang)

For the Rice:

  • 1 cup long-grain rice (such as basmati or jasmine)
  • 2 cups chicken broth (or water for a lighter flavor)
  • 1/4 tsp salt
  • 1/2 tsp sesame oil (optional, for extra flavor)

Sweet Chili Sauce Drizzle:

  • 2 tbsp sweet chili sauce
  • 1 tsp sesame oil (optional)

Toppings:

  • 2 tbsp green onions, thinly sliced
  • 1 tbsp sesame seeds, toasted if desired

Instructions

Step 1: Prepare the Honey Garlic Sauce

  1. In a small bowl, combine honey, soy sauce, minced garlic, ginger, and lemon juice. Whisk until well blended.
  2. Set aside for the shrimp.

Step 2: Cook the Shrimp

  1. In a large skillet over medium-high heat, add olive oil.
  2. Season the shrimp with salt and pepper and place in the skillet.
  3. Sear shrimp for about 2-3 minutes on each side until they turn pink and opaque. Remove shrimp from the skillet and set aside.

Step 3: Cook the Rice

  1. In the same skillet, add the rice and chicken broth (or water).
  2. Add a small pinch of salt and sesame oil to the rice for added flavor.
  3. Bring the mixture to a boil, then reduce to a simmer, cover, and cook for 12-15 minutes, or until the rice is tender and the liquid is absorbed.

Step 4: Add Honey Garlic Sauce to Shrimp

  1. Once the rice is cooked, return the shrimp to the skillet, placing it on top of the rice.
  2. Pour the prepared honey garlic sauce over the shrimp and rice.
  3. Toss gently to coat the shrimp and allow the sauce to warm through for about 2 minutes.

Step 5: Sweet Chili Sauce Drizzle

  1. In a small bowl, mix sweet chili sauce with sesame oil.
  2. Drizzle the sauce over the shrimp and rice for an added kick of sweetness and heat.

Step 6: Add Toppings

  1. Sprinkle the dish with sliced green onions and sesame seeds before serving for a fresh, vibrant finish.
