- ¼ cup soy sauce (preferably low sodium)
- 2 tablespoons rice vinegar

- 1 cup jasmine or basmati rice
- 2 cups chicken broth (or water)
- 1 tablespoon butter
- Pinch of salt

- 2 tablespoons chopped green onions
- 1 tablespoon sesame seeds
Instructions
Step 1: Preparing the Rice
- Rinse the rice thoroughly under cold water until the water runs clear. This removes excess starch for fluffier rice.
- In a medium saucepan, combine the rice, chicken broth, butter, and a pinch of salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until all the liquid is absorbed.
- Remove from heat and let the rice rest, covered, for about 5 minutes. Fluff with a fork before serving.
Step 2: Cooking the Chicken
- Season the chicken with salt and pepper.
- In a large skillet, heat olive oil and butter over medium-high heat.
- Add the chicken thighs and cook for about 4-5 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
Step 3: Making the Honey Soy Garlic Sauce
- In the same skillet, add a little more butter if needed, and sauté the onion until soft, about 3 minutes.
- Add the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant.
- Mix in the honey, soy sauce, rice vinegar, sesame oil, ketchup (if using), and chili flakes. Stir well to combine.
- Bring the mixture to a simmer and let it cook for 5 minutes until slightly reduced.
- Add the cornstarch slurry (cornstarch mixed with water) to thicken the sauce, stirring continuously until it reaches the desired consistency.
Step 4: Combining Chicken with Sauce
- Return the cooked chicken to the skillet and spoon the sauce over the chicken pieces.
- Let the chicken simmer in the sauce for 5 minutes, ensuring each piece is well coated.
Step 5: Serving
- Plate a portion of fluffy rice and top it with the honey garlic chicken.
- Drizzle any remaining sauce over the dish.
- Garnish with chopped green onions and sesame seeds for an extra burst of flavor.
