Instructions

Follow these step-by-step instructions to create your delicious Holiday Alfredo Lasagna:

Step 1: Prepare the spinach and ricotta mixture

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  2. Add the fresh spinach and cook until wilted. If using frozen spinach, ensure it is fully thawed and drained before adding it to the skillet.
  3. In a large mixing bowl, combine ricotta cheese, sautéed spinach, eggs, 1/4 cup Parmesan cheese, salt, pepper, and Italian seasoning. Mix well until fully combined and set aside.

Step 2: Cook the lasagna noodles

  1. If you’re using regular lasagna noodles, bring a large pot of salted water to a boil. Cook the noodles according to package instructions, typically 8-10 minutes, until they are al dente.
  2. Drain the noodles and lay them flat on parchment paper to prevent them from sticking together. If using oven-ready noodles, skip this step.

Step 3: Prepare the Alfredo sauce (if making from scratch)

  1. In a medium saucepan, melt butter over medium heat.
  2. Add minced garlic and cook for 1-2 minutes until fragrant.
  3. Stir in heavy cream and let the mixture simmer for 3-4 minutes.
  4. Gradually whisk in the Parmesan cheese until the sauce becomes smooth and creamy. Season with salt and pepper to taste.

Step 4: Assemble the lasagna

  1. Preheat your oven to 375°F (190°C).

  4. Spread 1/3 of the ricotta-spinach mixture evenly over the noodles.

  6. Repeat the layering process: noodles, ricotta-spinach mixture, Alfredo sauce, and mozzarella cheese, until you’ve completed three layers.
