Instructions

Preparation:

Step 1: Prepare the shrimp

Start by prepping your shrimp. Peel and devein the shrimp if it hasn’t already been done. Rinse the shrimp under cold water and pat them dry with a paper towel to remove excess moisture. This ensures the shrimp will grill nicely and get that beautiful char.

Step 2: Season the shrimp

Place the shrimp in a bowl and drizzle a tablespoon of olive oil over them. Sprinkle with salt and pepper, adjusting the amount based on your personal taste. Toss the shrimp to evenly coat them with the seasoning.

Step 3: Grill the shrimp

Heat a grill pan or outdoor grill to medium-high heat. Once the grill is hot, place the shrimp on the grill. Cook the shrimp for about 2-3 minutes on each side, or until they are opaque and pink. Be careful not to overcook, as shrimp can become rubbery if cooked for too long. Remove the shrimp from the grill and set them aside to cool slightly.

Step 4: Prepare the Caesar mixture

In a large mixing bowl, combine the chopped romaine lettuce, grilled shrimp, Caesar dressing, and grated Parmesan cheese. Toss everything together until the shrimp and lettuce are well-coated with the dressing. Ensure the Parmesan is evenly distributed to add a savory, nutty flavor throughout the wrap.

Step 5: Assemble the wraps

Lay out the tortillas on a clean, flat surface. Spoon a generous portion of the shrimp Caesar mixture onto the center of each tortilla. If you’d like extra crunch, now is the time to add croutons or any additional toppings. Fold the sides of the tortilla in, then roll it up tightly, starting from the bottom. Repeat this step for each tortilla, creating four wraps in total.

Step 6: Serve

Slice each wrap in half for easy handling, and serve immediately while the shrimp is still slightly warm. You can also serve the wraps with a side of extra Caesar dressing for dipping.

  • For added flavor, you can marinate the shrimp for about 15 minutes in a mixture of olive oil, lemon juice, and garlic before grilling. This gives the shrimp a zesty, aromatic flavor that pairs wonderfully with the creamy Caesar dressing.
