  • 1 lb (450g) salmon fillets, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 teaspoons lemon zest
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

 Creamy Dill Yogurt Sauce:

  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For Garnish:

  • Fresh lemon wedges
  • Fresh dill sprigs
  • A drizzle of olive oil

Instructions

Preparation:

Step 1:
Start by preparing the salmon. In a large bowl, mix together olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper. Add the cubed salmon pieces to the bowl and gently toss to coat. Let the salmon marinate for at least 15-20 minutes.

Step 2:
While the salmon is marinating, prepare the Creamy Dill Yogurt Sauce. In a small bowl, combine Greek yogurt, chopped fresh dill, lemon juice, lemon zest, minced garlic, and olive oil. Season with salt and pepper to taste. Mix everything well and refrigerate until ready to serve.

Step 3:
Preheat your grill to medium-high heat. If you’re using an outdoor grill, make sure to oil the grates to prevent sticking. Thread the salmon pieces onto the skewers, ensuring even spacing for consistent cooking.

Step 4:
Grill the salmon skewers for about 3-4 minutes per side, or until the salmon is just cooked through and has developed a nice char. Be careful not to overcook the salmon to maintain its tenderness.

Step 5:
Once the salmon is grilled to perfection, remove the skewers from the grill and let them rest for a minute. Serve the skewers hot, accompanied by the Creamy Dill Yogurt Sauce for dipping or drizzling.

Notes

  • For optimal flavor, make sure not to over-marinate the salmon as the lemon juice can start to break down the texture of the fish. Stick to the 20-30 minute mark for the best results.
  • If you don’t have a grill, you can also cook the salmon skewers in a grill pan on your stovetop.
