  • 4 lobster tails
  • 1 lb large shrimp, peeled and deveined

Instructions

Preparation:

Step 1: Prepare the Lobster Tails

Start by using kitchen shears to carefully cut the top shell of the lobster tails down the center. Make sure to leave the tail fin intact for presentation. Gently pull the lobster meat through the slit you created, and rest the meat on top of the shell. This method allows for even grilling and a beautiful presentation.

Step 2: Marinate the Shrimp

In a medium-sized bowl, add the peeled and deveined shrimp. Drizzle 2 tablespoons of olive oil over the shrimp, then season them with salt, pepper, and cayenne pepper if you desire a spicy kick. Toss the shrimp to coat them evenly with the seasoning and oil. Let the shrimp marinate while you prepare the other components.

Step 3: Make the Garlic Butter

In a small bowl, combine the melted butter, minced garlic, fresh lemon juice, paprika, salt, and pepper. Stir the mixture until everything is well combined. This garlic butter will add a rich, aromatic flavor to both the lobster and shrimp while they grill.

Step 4: Grill the Lobster

Preheat your grill to medium-high heat. Brush the lobster meat generously with half of the garlic butter mixture, making sure to get the butter into all the crevices. Place the lobster tails on the grill, shell side down. Grill the lobster for 8 to 10 minutes, basting occasionally with the garlic butter, until the meat is opaque, slightly charred, and fully cooked. The shell will turn a bright red, signaling that the lobster is ready.

Step 5: Grill the Shrimp

After the lobster has been grilling for about 5 minutes, place the shrimp on the grill. Cook the shrimp for 2 to 3 minutes on each side, turning once. You’ll know the shrimp are done when they turn pink and firm to the touch.

Step 6: Serve

Once the lobster and shrimp are fully cooked, transfer them to a serving platter. Drizzle the remaining garlic butter over the top to enhance the flavor. Garnish the dish with freshly chopped parsley for a burst of color and added freshness. Serve the lobster and shrimp with lemon wedges on the side for an extra tangy finish. You can also pair the seafood with a variety of side dishes like grilled vegetables or a fresh green salad.
