Preparation
Step 1: Prepare the Lobster Tails and Shrimp
- Start by preheating your grill to medium-high heat.
- Using kitchen shears, carefully cut through the top shell of each lobster tail, stopping at the base. Then gently pull the shell apart, lifting the meat slightly out to rest on top of the shell for an attractive presentation.
- Pat the shrimp dry with paper towels to remove excess moisture. Set aside while preparing the marinade.
Step 2: Make the Garlic Butter Marinade
- In a small bowl, combine the melted butter, olive oil, minced garlic, lemon juice, chopped parsley, paprika, salt, and black pepper.
- Whisk the ingredients thoroughly until they’re well combined and slightly emulsified, forming a smooth and aromatic garlic lemon butter marinade.
Step 3: Marinate and Grill
- Using a basting brush, generously coat the lobster tails and shrimp with the garlic butter marinade.
- Place the lobster tails on the grill with the meat side facing up, grilling for 10-12 minutes. Baste occasionally with more garlic butter, until the lobster meat is opaque and fully cooked.
- Add the shrimp to the grill about 5 minutes before the lobster is done. Grill the shrimp for approximately 2-3 minutes per side, or until they turn pink and opaque.
Step 4: Serve
- Once cooked, remove the lobster tails and shrimp from the grill and arrange them on a serving platter.
- Drizzle any remaining garlic butter marinade over the top, garnishing with fresh parsley for a burst of color.
- Serve with lemon wedges for squeezing over the seafood to enhance the zesty flavor.
