- 4 boneless, skinless chicken breasts
- 1 bunch asparagus, trimmed
- 1 ripe avocado, sliced
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper, to taste
- Fresh herbs (parsley or cilantro) for garnish
Instructions
Preparation:
Step 1:
Preheat the grill to medium-high heat. Rub the chicken breasts with olive oil, paprika, cumin, minced garlic, salt, and pepper. Set aside for a few minutes to marinate.
Step 2:
While the chicken is marinating, prepare the asparagus. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.
Step 3:
Place the chicken breasts on the grill and cook for about 6-7 minutes on each side or until fully cooked through (internal temperature of 165°F). Remove and let rest for a few minutes.
Step 4:
Grill the asparagus for about 5 minutes, turning occasionally, until they are tender and slightly charred.
Step 5:
Slice the grilled chicken, serve with grilled asparagus, and add fresh avocado slices on top. Squeeze lemon juice over everything and garnish with fresh herbs.
Notes
Make sure to rest the grilled chicken for a few minutes before slicing to keep it juicy.
