For the Chicken Bites:

For the Creamy Parmesan Pasta:
- 12 oz fettuccine or pasta of your choice
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup chicken broth
- Salt and pepper, to taste
- Extra garlic butter (optional, for drizzling)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package instructions until al dente. (This usually takes about 8-10 minutes.)
- Drain the pasta and set it aside. Drizzle it with a little olive oil to prevent sticking if needed.
Step 2: Cook the Chicken Bites
- Heat 2 tablespoons of olive oil over medium-high heat in a large skillet.
- Add the bite-sized chicken pieces to the pan. Season them with salt, pepper, and Italian seasoning.
- Cook for 6-8 minutes until the chicken turns golden brown and is cooked through.
- Remove the cooked chicken from the skillet and set it aside on a plate.
Step 3: Make the Garlic Butter Sauce
- In the same skillet (do not clean it, so the flavors remain intact), reduce the heat to medium.
- Add 4 tablespoons of butter and let it melt.
- Stir in the minced garlic and sauté for about 30 seconds until fragrant.
- Return the cooked chicken to the skillet and toss everything to coat in the garlic butter sauce.
Step 4: Prepare the Creamy Parmesan Sauce
- In a separate pan, melt 2 tablespoons of butter over medium heat.
- Add 2 cloves of minced garlic and sauté for another 30 seconds.
- Pour in the heavy cream and chicken broth, stirring continuously.
- Bring the sauce to a gentle simmer and slowly whisk in the grated Parmesan cheese until the sauce is smooth and thickened.
- Season with salt and pepper to taste.
Step 5: Combine Pasta and Sauce
- Add the cooked pasta to the pan with the creamy Parmesan sauce.
- Toss well to ensure every strand of pasta is coated in the sauce.
Step 6: Serve
- Plate the creamy Parmesan pasta and top it with the garlic butter chicken bites.
- Drizzle with extra garlic butter if desired for added flavor.
- Garnish with fresh parsley and serve hot.
