Easter Muddy Buddies (Bunny Chow) – A Sweet & Crunchy Easter Treat

For the Muddy Buddies Base:

  • 9 cups Rice Chex or Corn Chex cereal
  • 1 cup white chocolate chips (or candy melts)
  • ½ cup peanut butter (creamy)
  • ¼ cup unsalted butter
  • 1 tsp vanilla extract
  • 1 ½ cups powdered sugar

For the Easter Mix-Ins:

  • 1 cup pastel M&M’s (Easter colors)
  • ½ cup mini marshmallows
  • ½ cup Easter sprinkles

Optional Add-Ins:

  • ¼ cup crushed pretzels (for a salty crunch)
  • ½ cup mini Cadbury eggs
  • ½ cup shredded coconut (for a “bunny tail” effect! 🐰)

Instructions

Preparation:

1: Melt the White Chocolate & Peanut Butter

  1. In a microwave-safe bowl, combine white chocolate chips, peanut butter, and butter.
  2. Microwave in 30-second intervals, stirring in between, until fully melted and smooth (about 1–2 minutes total).
  3. Stir in the vanilla extract.

2: Coat the Chex Cereal

  1. Place the Chex cereal in a large mixing bowl.
  2. Pour the melted chocolate-peanut butter mixture over the cereal.
  3. Gently stir until all the cereal is evenly coated.

3: Toss in Powdered Sugar

  1. Transfer the coated cereal into a large Ziploc bag (or use a mixing bowl with a lid).
  2. Add the powdered sugar, seal the bag, and shake well until all pieces are evenly coated.
  3. Spread the cereal mixture onto a parchment-lined baking sheet and let it cool for 10–15 minutes.

4: Add the Easter Mix-Ins

  1. Once the coated cereal has cooled completely, transfer it to a large serving bowl.
  2. Stir in the pastel M&M’s, mini marshmallows, Easter sprinkles, and any optional add-ins like pretzels, Cadbury eggs, or shredded coconut.

5: Serve & Enjoy!

  • Serve immediately or store in an airtight container for later!
