- 1 lb ground beef
- 1 cup uncooked long-grain white rice
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chiles (like Rotel)
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup beef broth
- 1/2 cup sour cream
- 2 cups shredded Mexican blend cheese, divided
- 2 cups crushed Doritos (Nacho Cheese flavor or your choice)
- Salt and pepper to taste
- Chopped green onions and fresh cilantro, for garnish (optional)
Instructions
tep 1: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish and set aside.
Step 2: In a large skillet, cook the ground beef over medium heat until browned and cooked through, about 5–7 minutes. Drain any excess fat.
Step 3: Add the chopped onion, green bell pepper, and minced garlic to the skillet with the beef. Sauté until the vegetables soften, about 3–4 minutes.
Step 4: Stir in the taco seasoning, mixing well to coat the beef and vegetables. Add the beef broth, diced tomatoes with green chiles, corn, and black beans. Stir to combine.
Step 5: Add the uncooked rice to the skillet, stirring until everything is well-mixed. Season with salt and pepper to taste.
Step 6: Pour the mixture into the prepared baking dish, spreading it evenly. Cover the dish with foil and bake for 30 minutes, or until the rice is tender and most of the liquid is absorbed.
Step 7: Remove the dish from the oven and carefully stir in the sour cream and 1 cup of shredded cheese until well-combined.
Step 8: Spread the mixture evenly again, then top with the remaining cheese.
Step 9: Sprinkle the crushed Doritos over the top of the cheese layer, pressing down slightly to adhere.
Step 10: Return the dish to the oven, uncovered, and bake for an additional 10–15 minutes, or until the cheese is melted and bubbly and the Doritos are lightly toasted.
Step 11: Remove from the oven and let the casserole cool slightly. Garnish with chopped green onions and fresh cilantro if desired.
