Description

This Country Ranch Green Beans and Potatoes with Bacon dish is the ultimate comfort food, combining the earthiness of fresh green beans, the heartiness of potatoes, and the savory flavor of bacon. It’s a perfect side dish for family dinners, potlucks, or holiday gatherings. The addition of ranch seasoning elevates the flavors, making this simple dish unforgettable.

Ingredients

Scale
  • 1 lb fresh green beans, trimmed and cut into bite-sized pieces
  • 4 cups baby potatoes (or 4 large potatoes), peeled and diced
  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) ranch seasoning mix
  • ½ tsp black pepper
  • ¼ cup chicken broth (or water)
  • Salt (to taste)
  • Optional garnish: fresh parsley or chives, chopped

Instructions

Step 1: Cook the Bacon

  • In a large skillet or pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Stir occasionally to ensure even cooking.
  • Once cooked, transfer the bacon to a plate lined with paper towels to drain, leaving the bacon grease in the skillet.

Step 2: Sauté the Onion and Garlic

  • In the same skillet, add the diced onion to the bacon grease and sauté for about 3-4 minutes, or until softened and translucent.
  • Add the minced garlic and cook for another 30 seconds until fragrant. Stir to ensure it doesn’t burn.

Step 3: Add the Potatoes

  • Add the diced potatoes to the skillet. Stir them around to coat with the onion and garlic mixture, and season with black pepper.
  • Pour in the chicken broth (or water) to help the potatoes cook evenly without sticking to the pan.
  • Cover the skillet with a lid and cook the potatoes for about 10-15 minutes on medium-low heat, stirring occasionally, until they are tender but not mushy.

Step 4: Add the Green Beans

  • Once the potatoes are tender, add the green beans to the skillet.
  • Sprinkle the ranch seasoning evenly over the green beans and potatoes, then stir to combine.
  • Cover again and cook for another 10-12 minutes, or until the green beans are tender yet still crisp.

Step 5: Add the Bacon and Finish the Dish

  • Once the green beans are cooked to your desired tenderness, stir in the cooked bacon.
  • Taste and adjust the seasoning by adding more salt or pepper, if needed.

Step 6: Serve

  • Transfer the dish to a serving bowl and garnish with freshly chopped parsley or chives for added color and flavor. Serve warm and enjoy!

Notes

Cooking Notes:

  • Potatoes: You can use baby potatoes for their tender texture and quick cooking time, but regular potatoes like Yukon Gold or Russet work just as well. Dice them into smaller cubes to ensure even cooking.
  • Green Beans: Fresh green beans are ideal for this recipe as they hold their texture better, but frozen green beans can also be used in a pinch—just adjust the cooking time accordingly.
  • Bacon Grease: If you prefer a lighter dish, you can drain some of the bacon grease before sautéing the onion. However, leaving a small amount adds richness and flavor to the dish.

Serving Suggestions:

  • Main Dish: Serve as a hearty side with roasted chicken, pork chops, or grilled steak.
  • Brunch: This dish also pairs well with scrambled eggs or a frittata for a hearty breakfast or brunch.
  • Vegetarian Option: For a vegetarian twist, omit the bacon and use olive oil instead of bacon grease. Add mushrooms for an extra layer of flavor.

Tips:

  • Crispy Bacon: For extra crispy bacon, cook the bacon separately in the oven on a baking sheet at 400°F for about 12-15 minutes, then crumble it over the finished dish.
  • Make Ahead: You can prep the potatoes and green beans in advance by boiling them separately, then finishing the dish with bacon, onions, and ranch seasoning just before serving.
  • Flavor Boost: Add a dash of smoked paprika or red pepper flakes for a spicy kick.
