Ingredients

- 400 g (14 oz) cod fillets, cut into chunks
- 200 g (7 oz) shrimp, peeled and deveined
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 can (400 g / 14 oz) crushed tomatoes
- 1/2 cup (125 ml) dry white wine
- 2 cups (500 ml) fish or vegetable broth
- 2 tbsp tomato paste
- 1 bay leaf
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional, for spice)
- 1/2 tsp thyme
- 1/2 tsp oregano
- 2 tbsp olive oil
- 1 tbsp butter
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
Step 1: Sauté the vegetables
Heat olive oil and butter in a large pot over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5–7 minutes until the vegetables are softened.
Step 2: Add garlic and spices
Stir in the minced garlic, paprika, cayenne pepper (if using), thyme, and oregano. Cook for another 1–2 minutes until fragrant.
Step 3: Deglaze with white wine
Pour in the white wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 2 minutes until slightly reduced.
Step 4: Build the stew base
Stir in the tomato paste and crushed tomatoes. Add the bay leaf and broth, then season with salt and black pepper. Bring to a gentle simmer.
Step 5: Cook the cod
Add the cod chunks to the simmering stew. Cover and let cook for about 10 minutes, or until the cod is opaque and flakes easily.
Step 6: Add the shrimp
Gently stir in the shrimp and cook for an additional 5 minutes, or until the shrimp turn pink and are fully cooked.
Step 7: Final touch and serving
Remove the bay leaf and discard. Garnish the stew with freshly chopped parsley and serve with lemon wedges.
