Ingredients

For the Fish and Sauce:
  • 2 white fish fillets (such as cod, tilapia, or halibut)
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 cup coconut milk (full-fat for extra creaminess)
  • 2 tbsp lime juice (about 1 lime)
  • 1 tsp lime zest
  • 2 cloves garlic, minced
  • 1/2 tsp ginger, grated
  • 1/4 tsp red pepper flakes (optional, for a hint of heat)
  • Fresh cilantro, chopped (for garnish)
For the Rice:
  • 1 cup jasmine or basmati rice
  • 1 3/4 cups water
  • Salt, to taste
  • 1 tbsp chopped cilantro (optional, for garnish)

Instructions

Preparation

Step 1: Cook the Rice

First, rinse the jasmine or basmati rice under cold water until the water runs clear to remove excess starch. Next, in a medium-sized saucepan, combine the rice, water, and a pinch of salt. Then, place the saucepan over medium-high heat and bring it to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the water is absorbed and the rice is tender. Afterward, fluff the rice with a fork, set it aside, and garnish with a sprinkle of fresh cilantro if desired.

Step 2: Season and Sear the Fish

Meanwhile, pat the fish fillets dry with paper towels and season both sides with salt and black pepper to enhance their natural flavors. Subsequently, heat olive oil in a large skillet over medium-high heat. Ensure the oil is hot before adding the fish to achieve a golden crust. Carefully place the fish fillets in the skillet and cook for 3-4 minutes on each side, depending on thickness, until the fish is opaque and flakes easily with a fork. Once cooked, transfer the fish to a plate and set it aside. This step prevents overcooking while you prepare the sauce.

Step 3: Prepare the Coconut Lime Sauce

In the same skillet used for the fish, add the minced garlic and grated ginger. Sauté for about 1 minute until they become fragrant, being careful not to burn the garlic. Then, pour in the coconut milk, followed by lime juice and lime zest. Stir the mixture to combine thoroughly. Additionally, add the optional red pepper flakes if a hint of heat is desired, adjusting the amount to taste. Simmer the sauce over medium heat for 3-4 minutes, allowing it to thicken slightly and meld the flavors.

Step 4: Combine the Fish and Sauce

Gently return the cooked fish fillets to the skillet, placing them in the coconut lime sauce. Spoon the sauce over the fish to coat them well, allowing the flavors to infuse. Let the fish simmer in the sauce for another minute to ensure a perfect blend of tangy, creamy, and herby flavors.

Step 5: Serve

Finally, serve each fish fillet over a bed of fragrant rice. Garnish with fresh cilantro and, if desired, additional lime wedges for an extra citrusy punch. Enjoy the dish warm, as each bite offers a balance of creamy coconut, zesty lime, and aromatic rice.

Notes

Cooking Note

When cooking the fish, avoid flipping it too often to maintain its texture and achieve a nice, golden sear. Additionally, using a non-stick skillet or a well-seasoned pan helps prevent sticking and ensures an even cook on each side.
