Coconut Christmas Mojito

  • Author: Imili Johnson
  • Total Time:  10 minutes

Ingredients

Ingredients

  • Mint leaves – 8-10 fresh leaves, plus more for garnish
  • Lime juice – 1 oz, freshly squeezed for a zesty touch
  • White rum – 2 oz, for that classic mojito base
  • Coconut cream – 2 oz, adds a creamy, tropical flavor
  • Coconut milk – 2 oz, for smoothness and depth
  • Simple syrup – 1-2 tsp, for sweetness (adjust based on preference)
  • Ice cubes – as needed, crushed or cubed
  • Sparkling water or club soda – a splash, to top off the drink
  • Shredded coconut – for a decorative rim
  • Cranberries or pomegranate seeds – optional, for a festive garnish

Instructions

Preparation

Step 1: In a small, shallow dish, spread out the shredded coconut. Run a lime wedge along the rim of each glass, then dip the rims into the shredded coconut, pressing gently to coat. This gives a snowy, wintery look to each glass.

Step 2: In a cocktail shaker, combine the mint leaves and simple syrup. Muddle gently to release the mint’s aroma and flavor without tearing the leaves. This adds a fresh, herbal taste to balance the sweetness of the drink.

Step 3: Add the lime juice, white rum, coconut cream, and coconut milk to the shaker. Fill with ice and shake vigorously for 10-15 seconds until all ingredients are well mixed and chilled.

Step 4: Fill your prepared glass with ice, and strain the shaken mixture into the glass, filling it about three-quarters full.

Step 5: Top off with a splash of sparkling water or club soda for a light, effervescent finish. Give the drink a quick stir to combine.

Step 6: Garnish with additional mint leaves and cranberries or pomegranate seeds to enhance the holiday presentation.

Notes

  • Coconut Cream vs. Coconut Milk: Coconut cream is thicker and richer, lending a creamier texture, while coconut milk has a lighter consistency. Adjust based on desired creaminess.
  • Mint Muddling: Be gentle when muddling mint to avoid bitterness. A light pressing is all that’s needed to release its oils.
