Christmas Cowboy Cookies Recipe

  • Author: Imili Johnson
  • Total Time: 25-30 minutes

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups rolled oats
  • 1 ½ cups semisweet chocolate chips
  • 1 cup shredded coconut (optional but adds great texture)
  • 1 cup chopped pecans or walnuts
  • ½ cup red and green sprinkles (for that festive touch)
  • Optional add-ins: Dried cranberries, white chocolate chips, or toffee bits

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone baking mats. This will ensure the cookies bake evenly and prevent them from sticking.

Step 2: Mix the Dry Ingredients

  • In a large bowl, whisk together the 3 cups of flour, 1 tablespoon of baking powder, and 1 tablespoon of baking soda. Set aside.

Step 3: Cream the Butter and Sugars

  • In another large mixing bowl, use a hand mixer or stand mixer to cream together the 1 cup of softened butter, 1 cup of brown sugar, and 1 cup of granulated sugar. Beat on medium speed for about 2-3 minutes, or until the mixture is light and fluffy. This step is important for creating the perfect texture in your cookies.

Step 4: Add the Eggs and Vanilla

  • Add the 2 eggs, one at a time, beating well after each addition. Then, mix in the 1 tablespoon of vanilla extract. Scrape down the sides of the bowl to ensure everything is evenly incorporated.

Step 5: Combine Wet and Dry Ingredients

  • Slowly add the dry ingredients into the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can make the cookies tough.

Step 6: Add the Mix-ins

  • Using a wooden spoon or spatula, gently fold in the 2 cups of rolled oats, 1 ½ cups of semisweet chocolate chips, 1 cup of shredded coconut (if using), 1 cup of chopped nuts, and ½ cup of red and green sprinkles. You can also add optional ingredients like dried cranberries or white chocolate chips at this stage for more flavor.

Step 7: Scoop the Dough

  • Scoop out the cookie dough using a cookie scoop or tablespoon and place it on the prepared baking sheets, leaving about 2 inches of space between each cookie. The dough will spread slightly while baking, so give them enough room.

Step 8: Bake

  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are just set. Avoid overbaking, as the cookies will continue to firm up as they cool.

Step 9: Cool

  • Let the cookies cool on the baking sheets for about 5 minutes, then transfer them to a wire rack to cool completely.
