Chicken Fajita

Ingredients

  • 2 large chicken breasts, sliced into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 8 small flour tortillas (or corn tortillas)
  • Fresh cilantro for garnish (optional)

For the Fajita Seasoning (Homemade Blend):

  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional, for spice)

Instructions

Step 1: Prepare the Chicken & Vegetables

  • Start by slicing the chicken breasts into thin strips. Set aside.
  • Thinly slice the bell peppers and red onion.

Step 2: Mix the Seasoning

  • In a small bowl, mix together all the fajita seasoning ingredients: chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, and crushed red pepper flakes. Set aside.

Step 3: Cook the Chicken

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced chicken to the pan and sprinkle half of the fajita seasoning over the chicken. Cook for about 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through. Once done, remove the chicken from the skillet and set it aside.

Step 4: Cook the Vegetables

  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and onions to the skillet, sprinkle with the remaining fajita seasoning, and sauté for about 5-7 minutes until the vegetables are slightly softened and lightly charred.

Step 5: Combine Chicken and Vegetables

  • Once the vegetables are cooked, add the cooked chicken back into the skillet with the vegetables. Stir to combine and heat everything through for an additional 1-2 minutes.

Step 6: Warm the Tortillas

  • Warm the tortillas by placing them on a dry skillet or griddle over medium heat for about 30 seconds per side, or you can wrap them in foil and warm them in a low oven.

Step 7: Serve the Fajitas

  • Serve the chicken and vegetable mixture hot, on top of the warmed tortillas. Garnish with freshly chopped cilantro for extra flavor.
