Caribbean Sunset Cocktail

  • Author: Imili Johnson
  • Total Time: 5 minutes

Ingredients

  • 2 oz coconut rum (Malibu or any coconut-flavored rum)

  • 1 oz orange juice (fresh-squeezed or store-bought)

  • 1 oz pineapple juice (preferably not from concentrate for best flavor)

  • ½ oz grenadine (adds sweetness and creates the iconic sunset effect)

  • Splash of lime juice (optional) – for a hint of zesty brightness and balance

  • Ice – enough to fill your serving glass

Garnish Options:

  • Orange slice

  • Maraschino cherry

  • Tiny paper umbrella

  • Pineapple wedge or leaf (optional for extra tropical flair)

Instructions

Step 1: Prepare Your Glass

Choose a highball or hurricane glass to show off the stunning layered colors. Fill the glass to the top with fresh ice cubes. This will keep the drink chilled while helping maintain the separation of layers.

Step 2: Mix the Base

In a cocktail shaker (or directly into the glass if you’re skipping the shake), combine:

  • 2 oz coconut rum

  • 1 oz orange juice

  • 1 oz pineapple juice

  • Splash of lime juice (optional)

If using a shaker, fill it with ice and give the mixture a few gentle shakes. If pouring straight into the glass, stir gently to combine.

Step 3: Pour Into the Glass

Pour the mixed drink into your prepared glass over the ice, leaving about half an inch of space at the top for the grenadine.

Step 4: Create the Sunset

Slowly pour the grenadine down the inside edge of the glass. It will sink to the bottom and then gradually rise, creating a natural gradient that mimics a tropical sunset. Do not stir—let the layers stay separated for visual impact.

Step 5: Garnish and Serve

Top with your choice of garnish—an orange slice on the rim, a cherry skewered with a cocktail pick, and of course, a paper umbrella if you’re going for full tiki vibes. Serve immediately with a straw, if desired, and enjoy!

Notes

This cocktail is best enjoyed immediately after preparation to experience the full beauty of the layered “sunset” effect. Over time, the colors will blend—but that doesn’t diminish the flavor. Serve with festive straws, tropical-themed coasters, or tiki-inspired glassware for a vacation-in-a-glass vibe that brings the islands to your home. You don’t need an occasion to enjoy this drink, but it makes every occasion feel just a little more special.
