Ingredients (Serves 10–12)
- 1 packet (96 g / 3.4 oz) instant vanilla pudding mix
- 1 cup (250 ml) cold milk
- 1 tub (225 g / 8 oz) whipped topping (e.g. Cool Whip), thawed
- 1 can (565 g / 20 oz) crushed pineapple, well drained
- 2 medium apples, chopped (Granny Smith for tartness or Honeycrisp for sweetness)
- 1 tsp lemon juice (to keep apples from browning)
- 1 cup mini marshmallows
- ½ cup (120 ml) caramel sauce, plus extra for drizzling
- ½ cup chopped pecans or walnuts (optional for crunch)
Instructions
Preparation:
1: Prepare the Pudding Base
- In a large mixing bowl, combine the instant vanilla pudding mix and cold milk.
- Whisk for about 2 minutes, or until the mixture begins to thicken.
- Let it sit for 2–3 minutes more to firm up to a pudding consistency.
2: Fold in Whipped Topping
- Add the thawed whipped topping into the pudding.
- Use a spatula to gently fold it in until smooth and creamy.
- This forms the base of your fluff—light, airy, and subtly sweet.
3: Prepare the Fruit and Add-ins
- Chop apples into bite-sized pieces.
- Toss them in lemon juice to prevent browning and keep them crisp.
- Add the drained crushed pineapple, apples, and mini marshmallows into the pudding-cream mixture.
- Pour in ½ cup of caramel sauce and gently fold everything together until evenly coated.
4: Add Crunch (Optional)
- Stir in chopped pecans or walnuts if using.
- Mix just enough to distribute through the fluff without crushing the marshmallows or apples.
5: Chill and Garnish
- Transfer the Caramel Apple Fluff to a large serving bowl or individual dessert cups.
- Cover and refrigerate for at least 1 hour, or up to 4 hours, to let the flavours meld and the texture firm up.
- Just before serving, drizzle with extra caramel sauce, and optionally top with more nuts, whipped cream, or thin apple slices.
