Instructions

Preparation:

Step 1:
Begin by hard-boiling the eggs. Place 6 large eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once the water reaches a rolling boil, turn off the heat and cover the saucepan with a lid. Let the eggs sit in the hot water for 10 minutes. Afterward, carefully transfer the eggs to a bowl of ice water to cool them down rapidly. This step helps in easy peeling and prevents overcooking.

Step 2:
Once the eggs have cooled, peel them and slice them in half lengthwise. Gently remove the yolks and place them in a small bowl. Set the egg whites aside on a serving platter, cut side up, as they will later be filled with the yolk mixture.

Step 3:
To make the yolk filling, mash the egg yolks with a fork until you achieve a crumbly consistency. Add 1/4 cup mayonnaise, 1 teaspoon of Dijon mustard, 1/2 teaspoon of Cajun seasoning, 1/4 teaspoon of smoked paprika, and season with salt and pepper to taste. Stir the ingredients together until smooth and creamy. Taste the mixture and adjust seasoning if needed, ensuring a balance between the tangy mustard, creamy mayonnaise, and bold Cajun spice.

Step 4:
Carefully spoon or pipe the yolk mixture into the hollowed-out egg whites. If you want a polished presentation, use a piping bag with a star tip for a decorative swirl. Alternatively, a spoon will work just as well for a rustic and equally delicious result. Set aside while you prepare the shrimp.

Step 5:
In a small bowl, toss the peeled and deveined shrimp with 1 tablespoon of olive oil and 1/2 teaspoon of Cajun seasoning. Ensure that each shrimp is evenly coated with the seasoning. Heat a skillet over medium heat, and once it’s hot, sauté the shrimp for about 2-3 minutes, or until they turn pink and are fully cooked through. Shrimp cook quickly, so keep an eye on them to avoid overcooking, which can result in a tough texture.

Step 6:
Once the shrimp are cooked, remove them from the skillet and allow them to cool slightly. Place one cooked shrimp on top of each deviled egg, creating a perfect bite-sized seafood garnish.

Step 7:
Finally, for a fresh and vibrant touch, garnish the deviled eggs with chopped fresh parsley. This not only adds color but also enhances the flavor profile of the dish by introducing a subtle herbaceous note.

Notes

COOKING Note:

For an added burst of heat, feel free to add a pinch of cayenne pepper or additional Cajun seasoning to the yolk mixture. You can also experiment with smoked sea salt for extra depth in the flavor. Another option is to blacken the shrimp in the skillet for a more intense charred flavor, giving the dish a slightly smoky edge.
