  • 2 tablespoons oil, divided

For the Cajun Spice Mix:

  • 2 teaspoons garlic powder
  • 2 ½ teaspoons paprika
  • 1 ¼ teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 ¼ teaspoons dried thyme
  • ½ teaspoon red pepper flakes
  • 1 teaspoon cayenne pepper
  • 2 teaspoons salt
  • 1 teaspoon pepper

Optional Garnishes:

  • Fresh parsley, chopped
  • Lemon wedges, for garnish

Step 1:
Preheat your oven to 375°F (190°C).

Step 2:
Prepare the Cajun spice mix by combining garlic powder, paprika, dried oregano, onion powder, dried thyme, red pepper flakes, cayenne pepper, salt, and pepper in a small bowl. Mix well and set aside.

Step 3:
In a large baking dish, toss together the quartered red potatoes, corn pieces, 2 minced garlic cloves, 1 tablespoon of oil, and ½ tablespoon of the Cajun spice mix. Dot the mixture with small cubes of butter for added richness.

Step 4:
Place the baking dish in the preheated oven and bake for 25 minutes, stirring halfway through to ensure even cooking.

Step 5:
Meanwhile, in a separate bowl, combine the sliced turkey sausage, shrimp, remaining minced garlic, 1 tablespoon of oil, and ½ tablespoon of the Cajun spice mix. Toss until everything is evenly coated.

Step 6:
After 25 minutes, remove the baking dish from the oven and add the sausage and shrimp mixture to the potatoes and corn. Stir gently to combine all the ingredients.

Step 7:
Return the baking dish to the oven and bake for an additional 15 minutes, or until the shrimp are pink and fully cooked, the sausage is heated through, and the vegetables are tender.

Step 8:
Sprinkle the dish with fresh parsley for a pop of color and garnish with lemon wedges for a zesty finish. Serve hot and enjoy!

Notes

Cooking Notes:

  • Make sure the potatoes are cut into equal-sized pieces to ensure even cooking.
  • Fresh or frozen shrimp can be used, but if using frozen, thaw and pat them dry before tossing with the spice mix.
  • Use pre-cooked turkey sausage for faster preparation or raw sausage for a juicier result.
